This Turkey burger pays an homage to the heritage of the farm and iconic Turkey logo found on our labels and around the property. This recipe also reflects the versatile ways to enjoy turkey, just as the White Pinot I’m pairing with, showcases the unique winemaking styles of a Pinot Noir. In particular, the white floral and bright asian pear notes in the 2020 Estate White Pinot Noir add the perfect balance and harmony with the Raclette cheese and satisfying potato bun. Ingredients

  • 4 oz Raclette Cheese, sliced or diced into four 1 oz portions
  • 4 oz Gruyère Cheese, sliced
  • 1 lb. ground turkey
  • 1 Tbsp Canola oil or cooking oil spray
  • 1 tsp kosher salt
  • black pepper, to taste
  • 4 potato buns (my favorites are Martins)
  • 1 head little gem lettuce (baby romaine)
  • Ripe tomatoes, sliced
  • Red onion, thin sliced
  • Kosher dill pickles, sliced
  • Aioli (store bought or homemade)
  • Dijon mustard

Directions

Step 1

Heat canola oil in a cast iron pan over medium-high heat or spray a grill with cooking oil spray. Make sure to oil the surface well.

Split the ground turkey up into 8 equal size balls. On a flat surface, press the meat into 1/4 – 1/2-inch patties.

Place the Raclette Cheese into the center of one of the patties, leaving a patty border around the cheese. Place another thin patty on top, making an ooey-gooey cheesy center of the turkey burger! Pinch the sides together well so the cheese doesn’t seep out and repeat the process until you have four burgers.

Grill the burgers for 4-6 minutes and flip. Cook for another 2 minutes and add a slice of Gruyère Cheese to each burger. Cover and cook for another 2-4 minutes so the burger can steam the cheeses into perfect melting. Then, rest 3 minutes.

Step 2

To Assemble – Add the aioli and dijon mustard to the bottom bun, top with burger, layer lettuce, tomato, onion, and pickles. Top with the top bun and enjoy!
